Migrate GA to Plausible cookieless solution #8

Hello!

We want to remove tracking cookies that disturb our visitors. We will include Open Source solution like Plausible, in addition it´s cookieless.

Added Plausible integration in https://github.com/Achiefs/documentation.achiefs.github.io/commit/63ae99378c5c62167156c1b79547c541c025a71a

Now we will left some days to retrieve enough information to disable GA.
