Add stOSMO in preparation for stOSMO collateral add #230

What is the Problem Being Solved?

As part of the collateral onboarding process for stOSMO - we need to add the stOSMO icon to dapp UI so it renders throughout.

Description of the Design

Configure UI to render the stOSMO icon as per chain registry: https://github.com/cosmos/chain-registry/tree/master/stride/images
