Links for most DEM data/documentation are broken as of 08/02/2021. SRTM can now be downloaded from https://earthexplorer.usgs.gov/ but process is not as straight forward. Boundary regions have to be specified and then downloaded manually or using their software for "bulk download".

SRTM documentation can be found here https://lpdaac.usgs.gov/documents/179/SRTM_User_Guide_V3.pdf. However, I am not sure if that is the latest one.
