Alex, you get really excited about stuff, and you often try to encourage others, but it is also often operationalized by saying "YES AND ..." before they're finished talking. As someone who has been interviewed a lot, consider that the best interviewers I know, let their interviewees speak
You must also practice active listening. That means you are not waiting for them to pause so you can ask the next question on your list, but instead you must listen to what they've said and potentially, ask them about the details of that interaction.
