Rhinoceros are supposed to be calmed down by feeding them Wheat. However, I have fed multiple of them wheat to show that I am not a threat, but they still chase me to the ends of the biome to kill me. I did not hit them or have anything to agitate or make them feel threatened. The only fix that I have seen for this is to leave the chunks with the Rhinos or switch to peaceful mode.
