Beholder is probably unable to add due to copyright issues. Already in Japan, there has been a fuss about that.
Not sure if beholder copyright really is an issue(idk if it exists and even then its a mod). Regardless i updated suggestion to include a name change and slight appearance change.
First and foremost love the mod and thank you very much for making something so awesome!
Have you considered adding 4 legged dragons? Would be relatively simple compared to making new models entirely. I grew up on DnD and then Warcraft so to me "real" or "full" dragons have 4 legs, two wings, a breath attack, and generally intelligent. I understand the mod clearly started as a GOT dragon mod and i'm not trying to start any argument or anything I just would love to see 4 legged ones as well, perhaps simply a different breed? Or rename the current ones to wyverns?

Other mobs I think would be great to consider.
Succubus demon: Spawns rarely in the nether, or perhaps in some sort of new Demon Fortress. Has a "charm" attack that reduces your damage to it, can fly, and a whip attack or a non block exploding fireball attack if the whip is too hard to animate and/or code.

Balor: Another demon for the nether and almost certainly a boss. Large, with wings, a passive fire damage aura, whip and sword attack, and can summon other demons to support it. Perhaps a shadowflame variant as a super rare deep underground mob al la balrog.

Hellhound: Aggressive demon wolf in nether with more hp, and a fire dot bite. Possibly tamed from birth?

Nether Bat: Weak flying melee unit. Swarms are common.

Demonic Soldier: Last demon suggestion, foot solider of demon army, common in new demon fortress or just in general. Sword and shield, spear, and bow variants. Slighty more damage than a pigman attack.

Demonic fortress idea: New nether spawning structure (doesn't override vanilla nether fortress). A place for demons to rule and spawn from, filled with traps, loot and demons duh!

I know goblins are planned but in similar line what about dwarves, elves, and orcs. Orcs spawn in plains and savannahs and will fight dwarves and elves on sight. Dwarves in mountains and snow, and elves in forests and jungles. Dwarves and elves will attack orcs and goblins on sight.
Beholder: Spawns in deep caves and strongholds. Floats in air, has a beam attack that randomly applies a debuff in addition to damage. Copyright free version could be called eldtrich monstrousty or something, with eyestalks all around body and not just on top.

New human civilizations: Pirates, Barbarians, and Kingdoms. All humans attack orcs and goblins on sight and vice versa, Pirates attack and are attacked by Kingdom humans, Barbarians are neutral to both Pirates and Kingdoms. Pirates spawn on islands with new ship coves or wrecks. Barbarians spawn in plains, savannahs, and snow plains. Kingdoms spawn in plains, hills, on coasts, and forests.
I'd love to help out with any world building and structure design if desired and you end up implementing any of these.
