Update project architecture to be React 17 compliant

• Update dependencies
• Enforce Unit Testing using React Testing Library and Jest
• Convert the project to use functional components only
• Implement hooks where necessary when using AWS SDK

This is in preparation for React Lex Plus 2.0 with the focus on improved stability and reliability.
