Remove `sample_cell_count_estimate` from metadata table in downloadable files section

We will be removing the sample_cell_count_estimate column from downloadable metadata. We need to remove it from the table that describes the metadata columns in the following section as well: https://scpca.readthedocs.io/en/stable/download_files.html#metadata
