fix: add overrides for react-scripts dependencies #169

closes #137

Add overrides for vulnerable versions of postcss and nth-check. The vulnerable versions were only used by react-scripts dev dependency.

After previous PR #168 there is only 1 remaining GitHub Dependabot alert. npm audit report now shows 0 vulnerabilities, and the last dependabot alert should be resolved after this PR.
