User story

As a user, I want the metadata-service to be mapping Sharepoint and Labtracks responses to the latest aind-data-schema version.

Acceptance criteria

[x] Update aind-data-schema in pyproject.toml
[x] update schema_versions in unit tests
[x] any mapping fixes
