User story

As a user, I want the latest changes in the data-schema to be reflected in the metadata-service.

Acceptance criteria

[x] Given pyproject.toml, update pinned version of aind-data-schema
[x] Given new Surgery model, update Procedures mappings to map to surgeries
[x] Given ViralMaterial model, update TARS mappings
[x] Given any other changes, update mapping and unit tests
