refactor schema metadata logging to dict #38

Don't merge this yet until we get acquisition data results. This is a partial refactor of the schema log such that the result logs to dictionary and is much easier to parse.

@adamkglaser I have updated this against main without changing your extra hooks, and resimulated. It should be mergeable.
