fix: add test that cache is updated in useUpdateOptionListMutation

Description

• Add a test that checks if the cache is updated after the mutation has succeeded.
• Delete the mock data that is returned from the mutation in the global queries mocks. This makes it more clear what tests that are dependent of which data since we need to mock the query for the specific test.
