Fix/coach app refactor issues

Remember to delete Podfile and node modules

• Removed bottom tab header.
• Changed the AssessmentModal and UserGuideModal components names to remove warnings.
• Removed the App Name and Version from the package json.
• Fixed PodFile warnings adding use_modular_headers option.
• Updated PodFiles dependencies.

• Changed Start and End time format to LT (12 AM/PM).

• Added missing dependency for android (react-native-community/cli-platform-android).
• Changed headcounts attendance from modals to fullscreen. Issue link AmericaSCORESBayArea/AmericaScores-CoachApp/issues/416
• Updated the ApiConfig file by adding the firebase configurations to keep them private and to be able to remove them from the FirebaseConfigs file. Issue link AmericaSCORESBayArea/AmericaScores-CoachApp/issues/413

Tested on iPhone and Android simulators. Made a couple adjustments to iOS to get it to build. Will put those in a separate PR. Remember:

• delete node_modules and package-lock.json
• install npm
• cd ios && pod install
• if there are errors installing pods such as firebaseanalyticsWithoutAdSupport, pod update and follow directions to resolve
• We are targeting iOS 16.0 now (for compatibility with some older iPhones)
