add flag for unusual substrate #29

There are a list of standard substrates, we should flag substrates not on the list. This will be added to procFulcrum, substrates are in the field sampling .csv

I added this flag to makeSpSheet only b/c we thought that keeping the original substrates might be helpful. I'm marking this a closed for now.
