Fix the following actions (branch fix-workflows):

[x] R-CMD-check: failing on Mac only
[x] calc-coverage
[x] call-doc-and-style
[ ] pkgcheck (ropensci-review-tools): can't find INLA
[x] pkgdown: Error: Failed to resolve R version

Removed pkgcheck GHA - relies on docker file that cannot install INLA. Follow pkgcheck-action issue #23 for example on how to add a custom install. Will update when documentation is available.
