Hi Andy, how do I go about completely disabling the light mode layout?

You probably want to do the following:

Modify your theme css to only render whatever theme you want: https://github.com/andybelldesign/hylia/blob/master/src/scss/_theme.scss#L24
Remove the toggle:
- https://github.com/andybelldesign/hylia/blob/master/src/_includes/layouts/base.njk#L24
- https://github.com/andybelldesign/hylia/blob/master/src/_includes/partials/global/site-foot.njk#L14
