Update gems to make it possible to install latest environment.

Thank you for submitting the Pull Request. I have been meaning to upgrade this library to GTK 4 for a while. When I have a chance, I will test your changes, and if all included samples work, I will merge this PR.

Upgrading to GTK 4 is a good idea! Please use your time to do so rather than check this pull request.
