I was thinking about doing the documentation this way: https://github.com/cgwire/kitsu/tree/docs?tab=readme-ov-file at least using it as an inspitration, what do you think.

Yeah, that is a clean looking way to do it. I like it.

Do you think having it link to separate markup files in a docs dir off the root?

I would go directly in the docs dir, I mean how heavy can it be.
