document some caveats with IsaacSim 4.1.0 #27

IsaacSim 4.1.0 comes pre-installed with numpy 1.26.0 which is incompatible with the OmniLRS code. This PR add methods to handle that in the install_native.sh script as well as adding this to the documentation README

I made some mistake with my fork so I had to delete it. The changes in this PR are still relevant
