fix: typo in env vars #41

edit: markdown somehow drops the <ecosystem> and <network> part in WEB3_<ecosystem>_<network>_ALCHEMY_PROJECT_ID when not parsing as code notation.

We've tested this code locally, but note that tests are failing due to missing keys. These keys are available by branching off of main. Thank you very much for your contribution!!
