fixes: #75

Added "amoy" as a valid network, and added amoy's chain id for poa support.

[X] Passes all linting checks (pre-commit and CI jobs)
[ ] New test cases have been added and are passing
[ ] Documentation has been updated
[X] PR title follows Conventional Commit standard (will be automatically included in the changelog)

seems like this is failing due to 401 on polygon amoy endpoint

@fubuloubu Actually, I don't have access to our infura account so either I need access or someone else has to go in an check the box for Amoy.
