docs: improve input doc for plugins [APE-1344] #28

We were maybe having some confusions with the default behavior of this input, and it just doesnt work when using versions constraints in your ape-config.yaml, which is confusing.

A better fix that I don't have time for right now it to check if there are version constraints in the ape-config and if there, set the default to be just ..
