I like the simple approach, but I think it could some more oompf, so I drop some questions/suggestions:
Can we make it apparent to the player somehow that they are indeed going for a PKMN that has "whatever" eggmove? (Clarity in description)
Can we play with odds a bit here? ie, 75% to have one eggmove, 25% to have two? (Bit of variance)
To add a bit of spice and not have it be a "Fight or leave" type thing, how about we add a move check for "Sweet Scent", which removes the omniboost and pulls the PKMN with three eggmoves instead? (Support for unused moves)

Explanation/Notes on Design
Common event that gives slightly better team candidates than the average wild encounter. These passive/egg move being unlocked would not affect meta progression. IVs do, essentially meaning the PKMN that spawned counts as "caught twice" in terms of IVs.
