fix(colorscheme): lazy load all colorschemes

This adds lazy loading to all colorschemes by default. As of last week Telescope's colorscheme picker allows for picking lazy loaded colorschemes (https://github.com/nvim-telescope/telescope.nvim/pull/3295)
