Naming consistency for the demos

We need to have a consistent name and capitalization for all the demos we provide (directory and file names, paragraphs, etc)

Use ibu-insurance-demo as it is a demo (not reusable industry assert) and we might have more than one insurance demos
Use odm-miniloan-demo
