Migrate code to Micronaut #18

Only one endpoint and 2 controllers in this repo - which is still on Grails 2.

Suggest it could be migrated to Micronaut and run as a Lambda function on AWS.

It currently uses a grails plugin called "rendering" for PDF generation. This seems to use the following libraries:
