[Prover][Test] Performance test one broker + 1000 agents

Run a performance test on the proving broker with:

• one broker
• 1000 agents
• mocked proving (agents should sleep realistic amounts for each proof type)

Monitor: response time, HTTP error rate, CPU/memory/disk utilisation of broker.

I would say this combines nicely with https://github.com/AztecProtocol/aztec-packages/issues/10062 where you wouldn't need to mock proving.
