Update image tag for simulator to match the git tag used

Expected/desired behavior

When building & pushing the simulator image, update the script to use the git tag used to pull the simulator. This will make it easier to update the version and re-deploy

OS and Version?

Windows 7, 8 or 10. Linux (which distribution). macOS (Yosemite? El Capitan? Sierra?)
