I had the same question and on this page Azure Ruby Support it seems to show that Ruby will no longer be supported as no other versions are offered. Is this true?
Is there any update to this issue?

I am looking for the answer to this as well.
Hello,
I have deployed an app of Ruby on Rails so the supported version of Ruby on Azure is 2.7 so it'll End of Life soon. So I want to deploy Ruby 3.x versions so what should I do? The available stack is only 2.7.
