Of docker images and tags

For a long time, it was recommended to always pull the "latest" tag.

Recently, some advertising about the "stable" tag has popped up (cf.https://github.com/Azure/azure-cosmos-db-emulator-docker/issues/106#issuecomment-2367732719).

• Could some markdown documentation (eg. releases, or changelog, ...) be produced that describes when this "stable" tag is moved?
• Beside "stable", could it also be possible to tag the images with the major version as well (eg. "2"). This would avoid potentially suffering from some breaking change when version 3.x is released

In addition to this it would be great to be able to see the docker emulator image in https://mcr.microsoft.com/ like for other official images from Microsoft.

That would allow us to directly see available tags, image sha and modified dates
