artifact renaming, versioning update, and jar collection command #174

This PR:

closes #168 - renames the packages to azure-cosmos- (from azure-cosmosdb-)
bumps the version to 3.0.0-a1 (which I released adhoc) and then 3.0.0-a1-SNAPSHOT
adds antrun:run@default-cli goal to collect the packages into an easy format for publishing (and updates README)

Recommend disabling seeing whitespace changes in the PR for the Readme. My markdown prettifier cleaned up some whitespace stuff.
