Add latest preview OpenAPI swagger #25

Good to also include support for the latest OpenAPI swagger. At the moment everything works (including function calling), but would be good to have these definitions in APIM as well.

Versions we should support at least:

And will other versions still work (since we pass everything to the proxy anyways?).
