Adds additional Dockerfile for Mongo build. Updated build/deployment configs for Mongo Update backup.sh script for Mongo Update documentation and example in backup.conf

Thanks for this. I'll review as soon as I can. I've got some mongo databases I can test this on. Seeing about recruiting additional testing.

Merged into a separate branch so we can do some additional changes and cleanup.
