Update OpenShift 201 lab exercises to match new ACS UI #4869

The network policies section of the OpenShift 201 lab is now out of date after a recent update to the ACS UI.

This lab contents need:

[ ] Review and comparison to the new UI
[ ] Screenshotting new menus, updating instructions
[ ] Testing new lab steps.

This will then allow for creation of a new video for this section, documented in a separate ticket.
