This PR includes minor documentation cleanups, including:

Aligning terminology and style across documents
- Multiple docs: GenAI -> Gen AI
- Multiple docs: Creating Custom Model Classes -> Creating _New_ Model Classes
Fixing typos / errors
- Contributor Guide: Test coverage requirement is 90%, not 80%
- Contributing: Explicitly call out to fork and then clone
