I'm getting a fatal error message about a previously declared function with the same name (if pressbooks-mpdf is updated prior to PB v3.9.8)

Renaming the function to pb_mpdf_theme_css_override will resolve it, but it's Friday and we want to move with this next week, so I'll merge this PR and add a commit to change the name of the function instead of requiring it from you before I merge.
