Last release was in 2022!!!! Should we do a new release since tests are now passing?

Since so much has changed since the new release, I would vote we bump up to 2.0.

I've made a new milestone for v2.0 with things that I think should be cleaned up before a new release. https://github.com/BDNYC/sedkit/issues?q=is%3Aopen+is%3Aissue+milestone%3Av2.0

I went ahead and released 2.0 as the starting point. I'll change the milestone to 2.1
