Includes the restructuring of the simply workflow, as well as new examples and documentation of how to create a scenario and run a market simulation. The main features that adapted in this pull request are:

• [x] Delete: generate_scenario_example
• [x] Change: build_simulation to build_scenario, main to match_market, parameters in config.txt and config.py
• [x] Include: new example scenarios, documentation on how to create scenario and run match_market, automatic storing of scenario and match_market in project dir
