Add-documentation #385

Purpose/Approach

Make the structure of the backend complete (follows guide provided by Prisma, link in Design Patterns file)
Add documentation of backend
Add started integration test setup (currently fails due to our library api-interfaces not being read correctly when running with jest)

Testing steps to find bugs or errors in added code.
