mention port forwarding and how to in docker-compose.yml. also change to use docker-compose which sets everything up

the vlan 300 acl, drop is required if the acls will be 'explicitly allow'. Same for vlan 200 except we cant really apply ACLs without a user name. I guess if a captive portal was used, then drop would be useful.
