These changes remove some pitfalls I encountered when toying around with "train_text_recognition.py".

The first issue is that the "log" file might not contain enough information for inference (#19).
Also the number of labels was hardcoded to 52 which confused me (see #39) but apparently are in favor of changing that as well (see https://github.com/Bartzi/see/issues/27#issuecomment-399970121).
