Update to latest keycloak version: 16.1.1 Update wildfly-maven-plugin version to 2.1.0.Final

Hi, @bruce-stewart ! Is there anything else that needs to happen for this version increase other than the pom dependencies? I have the 16.1.1 version of Keycloak and I need this plugin to work, and I'm considering just building this branch locally so I can get the jar asap.
