It is always more fun if your gameplay is tailored to you as a player. Think FFXIV where you get full control over your ui or simpler stuff like changing the size of your UI in minecraft. Enabling or disabling automatic picking of items etc. It's just more fun and a lot of QoL changes.
Sorts of config
General explanation
There'll be 2 sorts of config:
In-game: personal changes you can make with no impact on the server of world think ui changes, stop picking dropped things etc.
In-file: think stuff that affects the whole world, hollow spawn rate, chances of getting a rare item etc.
Ideas for in-game
Not picking up items
Making the Ui bigger/smaller
Changing place of UI (instead of left put it right, up or right above inventory)
Display of cooldown: seconds or ticks
Display of max cooldown while it is not on cooldown
Ideas for in-file
Spawn rate hollows, shinigami, pluses
Element randomizer for zanpakuto (kill hollow and random element point) or set element (specific hollows give specific element)
