Do you have Leztz Stil planned? Could be a good way to give quincies a temporary boost and possibly go on a side quest to get them back (Maybe even stronger than before????)
Make Quincies have a weakness to hollows, meaning blut vene protects them less and if they take enough damage from one they get "hollow poisoning" which nerfs them until they cure it or something.

An option could be an "Elder Quincy" npc which will teach you the basics and a "Quincy General" NPC which teaches you more advanced skills with a final Yhwach npc that gives you your schrift and gives you access to vollstanding.

Blut arterie is the offensive application of blut and blut vene is the defensive version so adding those is necessary. For blut I think blut vene being obtained first makes sense since most mentions of blut relate to the defensive aspect. I think that it should be an ability you have to manually activate until you unlock something after blut arterie. Blut arterie should be activated by switching from blut vene.
After you unlock blut vene and blut arterie you will be able to unlock blut vene anhaben (the barrier technique Yhwach used)

This is a statistic that has an effect on the power of the spirit weapon and other abilities due to how quincies control the spiritual pressure in the air etc. But also their resistance to kido and how acute their perception of reishi is.

Overall strength and physical capabilities of the quincy, makes the speed and damage etc. change

Better control over your Blut, acquired with training.

Pretty much the hoho stat but for quincies

Spirit Weapon
The user makes a spirit weapon with ambient reishi. The power of the spirit weapon depends on the quincy level
Extra: spirit weapon
Each spirit weapon can give extra abilities, prominently the one that's shown is a bow it could:
Blut
Gives inhumane defensive and offensive capabilities by making reishi flow in the quincy's blood
Shadow
Allows to set point of teleports with shadows and to teleport directly into shadows
Schrift
A power gained from Yhwach that does something different for every quincy
Vollstandig
Big power boost with different visuals and abilities, think bankai or a sort of resurreccion
Weaknesses
Hollow Poison
Depending on the constitution level of the quincy after x amount of damage, they'll get poisoned or get inflicted by more damage if it's damage from a hollow.
