Bump `PlutoUI.jl` version and improve consistency #159

After upgrading to Julia1.10.0 the TableOfContents and Interactive elements of PlutoUI where broken.

It appears that PlutoUI used in the notebooks does not automatically update. I've manually edited the Project.toml in all notebooks and reran all notebook to make sure they still work. I've improved some consistency in the mean time

Closes #146 and closes #145
