The latest updates to the Block editor which have included the possibility of making POST requests have been included in the WordPress core by now. Just tested on WordPress 5.5.3 without the Gutenberg plugin, and it's working just fine. The last test (which required the Gutenberg plugin at least 8.8) was done on WordPress 5.5, so I'm not sure when in the meantime the changes were pulled in (maybe as soon as WordPress 5.5.1). In any case the requirement for installing the Gutenberg plugin can be removed from the Readme now.
