Change to use StackBlitz #64

Currently we are using Codesandbox. They have changed their marketing strategy which now restricts our use of it.

Change to use StackBlitz instead which should be almost a drop-in replacement. Remember to update the README.

Unfortunately, StackBlitz is currently fixed to node v18 (which is probably not a problem) and fixed to pnpm v8. This is a problem because we are now on v9 and nothing works in StackBlitz.

I did discover that if you invite a person to the Codesandbox workspace then the issue around pnpm install goes away - it's just for the anonymous user that it's a problem. The current Codesandbox plan (free) only allows 5 people to be invited (used up already). BNF is happy to get an upgraded the plan.
