Added the maxdim argument to pass to h5createDataset, so that you can change the dimensions in the H5 file.

Hi John, thanks for the PR. Can you tell me a little bit more about your use case?

Also please don't forget to run R CMD check on your fork of the package and make sure your changes don't introduce any new warnings.
