Upgrading simple_oauth module to its latest version

Would be good to upgrade simple_oauth module to its stable latest version ideally to 5.2.3 and above.

This module is in custom folder of Pantheon upstream due to requirement of code amendmends.

Notes from the last time we did the upgrade to 5.0.6

• Patch with https://github.com/FlumensIO/simple_oauth_patches/blob/main/simple_oauth.patch
• A bug was present in 5.2.0 which caused us a problem, https://www.drupal.org/project/simple_oauth/issues/3257293#comment-14453978. This may not have been fixed yet.
• There were also updates for libraries included in composer.json

      "lcobucci/jwt": "^3.4",
      "league/oauth2-server": "^8.0 < 8.2",
      "steverhoades/oauth2-openid-connect-server": "^1.1" 

• composer lock then needed updating with composer update lcobucci/jwt league/oauth2-server steverhoades/oauth2-openid-connect-server
• upgrading league/oauth2-server to 8.3 broke the app authentication and had to be reverted to 8.1.1
